    Decided to make a vegan, healthier version of one of my favorite recipes! They’re zucchini pancakes!
    The original recipe:
    Milk
    2 eggs
    Flour
    Cheese
    Zucchini

    The one i used:
    Soy milk
    Baking powder
    Whole wheat flour
    Zucchini
    Red bell pepper
    (evt. vegan cheese)


    Use a cheese grater and grate the zucchini and red bell pepper. Mix all the other stuff together. Now mix the veggies in with the other stuff and just bake it! (you can also make it in the oven but it takes a long time!)

    Voila! :D They’re delicious!

    I had low-fat cottage cheese, with black pepper and oregano sprinkled on top, with zucchini slices and cherry tomatoes…on top of Arnold 40 cal. bread.

    I don’t know why I keep having slices of bread today. 

    Any way, it was really tasty.
